Welcome to the first Monday of March! Can you believe we will already be setting our clocks forward an hour this Sunday?! I'm looking forward to getting home from work and still having some daylight left.
The weather this weekend was excellent! I was even lucky enough to spend some time in our front yard reading a book for a few hours while enjoying the warmth of the sun.
So what are we eating this week?
Monday: BFD: spinach omelets with whole wheat toast and OJ
Tuesday: Quinoa Stuffed Acorn Squash
Wednesday: Chicken Tortilla Soup (this never got made last week since Aaron was gone)
Thursday: Grilled Mozzarella and Tomato Sandwhiches with Marinara & Side Salad
Friday: Honestly this will probably be a leftovers night. We have a ton of veggies in our fridge and things that will need to be eaten. I hate to waste, so this will probably be the night I cook what's left and we throw a meal together.
