Hey guys! Do you remember the last time I got a Meal Plan Monday post up on time? Yeah....me neither. Sorry Friends!
I really had every intention of getting this out last night but then my sister came over. She's in town for her first clinical rotation and in exchange for the use of our printer, I had her work on my loose left hip (technically something in my SI joint she says) lingering from the 1/2 marathon training madness. It's about as pleasant as it sounds but it feels better today because my sister is awesome.
This weekend was spent almost entirely indoors. I was home from work on Friday because with the rain, it would have taken me 1/2 the day just to get there in the first place. I ended up reading
It's Really 10 Months: Delivering the Truth About the Glow of Pregnancy and Other Blatant Lies and it was HILARIOUS! I was on the couch in the living room trying not to wake Aaron up from the laughs that this early morning reading produced. The "book" is a collection of e-mails from three pregnant friends who discuss pretty much everything most pregnant women wouldn't willingly disclose publicly.
I spent the rest of my time trying to entertain the dogs (two labs inside for three days is just ridiculous), working on inside house projects (like cleaning the baseboards FUN! not) and cooking/baking. We also watched The Smurfs movie and the Oscars. I surprisingly didn't find The Smurfs to be that bad and for the first time ever I watched all of the Oscars, which did not disappoint either. Ellen was fantastic.

It's been a while since I've tried a new recipe that I would deem rave worthy but the "potato" soup I have on this week's menu is an absolute must try! It's lightened up but has all of the flavors of the kind my dad use to make when I was a kid on New Year's Day. Please. Try it. Thank you.

For Valentine's Day Aaron got me another week of Blue Apron! SO, our next box arrives this week and will fill the second half of our menu. Yes I'm cheating a bit but I'll link you to the recipes incase you want to join in on the culinary fun :)
Monday: Skinny Taste Baked Potato Soup with Salad
Tuesday: Homemade Chicken and Cheese Enchiladas with Salad. Enchiladas are another one of those meals I wing but if you've never made them before this recipe is the basic idea.
Friday: Latin-Spiced Shrimp in Butter Lettuce Cups with Red Quinoa & Poblano, Jicama and Orange Salad
