Please note the standard Maya/Marley standoff taking place as I write. Maya must be getting old because she gave in and let Marley have the new toy (this could very well be a first).
The news is also doing a segment on lingerie at the moment and their models appear to be about twelve years old. That's what I get for watching Fox 5.
Now onto what we really care about, cinnamon rolls. I love cinnamon rolls, especially on Christmas morning and this recipe from Kristen over at Iowa Girl Eats is great. Not only do these taste amazing but there's no yeast to deal with. Don't get me wrong, I bake with yeast but sometimes there just is not enough time to wait for it!
No Yeast Cinnamon Rolls
Filling
3/4 cup packed brown sugar
1/2 cup granulated sugar
1 Tablespoon cinnamon
1/2 teaspoon salt
2 Tablespoons butter, melted
Dough
2-1/2 cups all purpose flour, plus more for rolling out dough
1/4 cup granulated sugar
1-1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
5 Tablespoons butter, melted and divided
Icing (the best part!)
3oz cream cheese, softened
4 Tablespoons buttermilk
1 cup powdered sugar
You should preheat your oven to 425 degrees. While that's going on mix the filling ingredients together in a small bowl.
In a separate bowl combine flour, sugar, baking powder, baking soda and salt. In a separate bowl whisk together buttermilk and 4T butter. Add the liquids to the dry ingredients and stir until just mixed. If you mix too much your cinnamon rolls will be tough. Then kneed slightly until the dough forms to a ball.
Split the dough in half and roll each half into a rectangle on a lightly floured surface . Spread the filling evenly amongst both sheets of dough and then roll each sheet of dough from one end to the next forming a log shape. Proceed to slice each log into eight pieces. Place all (16) cinnamon rolls in a non-stick or sprayed baking pan and brush the tops with the remaining melted butter.
Bake in oven for 15 minutes or until golden brown.
While the rolls are baking mix together cream cheese, powdered sugar and buttermilk until smooth. Add buttermilk one tablespoon at a time to avoid getting to thin of an icing. When the cinnamon rolls come out of the oven drizzle with icing, allow to cool just enough, then enjoy!
